Ingredients:
2 cups rolled oats
1 cup unsweetened shredded coconut
1/2 cup almonds (roughly chopped)
1/2 cup coconut oil (melted)
1/4 - 1/2 cup maple syrup (adjust for personal taste preference)
1 tsp cinnamon
1 tsp vanilla extract
1/2 tsp almond extract
1 tsp salt
Directions:
Preheat oven to 300 F
Combine everything in a large mixing bowl
Spread evenly on a baking sheet
Bake for 30 minutes (mix the granola halfway through if your oven cooks unevenly like mine does)
Let your granola cool before storing it in an airtight container (a large jar with a tight-fitting lid is an excellent option)
